Haha friends this is a total blogger confession moment. Here’s the deal. During Christmas time I made this amazing hot chocolate. I accidentally left some out all night and the next day it was this decadent mousse. So I thought, “Yay a happy accident I can use as a recipe on my blog.”
I measured everything out and mixed it all together and stuck it in these cute little tea cups my Yia yia gave me and left them in the fridge to become mousse. The next day I eagerly checked them and lo and behold it was like thick hot chocolate. Hmmmm not what I was expecting. Trying to be optimistic I figured it was just the wrong type of coconut milk so I tried again. And I failed again. Then I realized I should try using coconut cream because surely that should work. I ran to the store and bought a really over priced can of coconut cream and tried a third time because “they” say third time is a charm. Nope, nada, ain’t happenin’. Talk about a comedy of errors! First it was hot chocolate and then it was a really runny pudding of sorts and the third time a slightly less soupy pudding.
So if you want to try some hot chocolate and NOT mousse here’s how to accomplish that:
1 can coconut cream/milk
1/4 cup coco powder
2 tablespoons honey
Put half the coconut cream in a bowl and the other half in a sauce pan on low heat. Next mix in the coco powder with the cold coconut cream until well blended. Then gradually add to the warming coconut cream in the pan. Once that is whisked in stir in the honey until dissolved. Put into some cute cups and enjoy!
Also don’t worry….all that chocolate pudding/hot chocolate/whatever these three ingredients make hasn’t gone to waste. Just to my waist. 😉 We’re happily eating way too much chocolate over here! Everyone that has tried it likes it even if we’re not quite sure what to call it! Maybe I should leave it out next time? Have you ever had any cookie comedies? Here's a suggestion that might work. Try whisking the cooled concoction or you can put it in your mixer and whip it until it's the right consistency. I'm sure you'll be pleasantly surprised.

Aren’t they so sweet? I love them but when I pulled them out it did make me bittersweet. Sweet because they were my Yia yia’s and I can only imagine the fun teas she used to have but also a little sad because I miss her so.
Okay so I did try whipping it on one of the batches and it STILL didn’t work! Ack what happened?! Happy Valentine’s Day to you too! I love you! <3 xxx
Two words. Snicker doodles.
One summer morning, I was asked to bake cookies for a garage sale. Confidently, I mixed together my ingredients, careful to measure. Surely they would turn out wonderful just like mom’s. They surely did not!!!!! I open the oven after eight minutes. To my complete shock and horror my perfect cookies had baked together flat as a pancake and gooey!! I cried.
My sisters, my mom interrogated me. All three amazing bakers could not fathom this blunder.
So….you are not supposed to use a wet measuring cup for sugar….or flour.
God bless my Dad for eating them, proclaiming them delicious.
Lol! This is too funny and I definitely appreciate you sharing it with me! I still can’t figure out what went wrong with mine… Haha and yes I’m thankful for dad’s that eat the stuff and say they love it regardless.
My mom and I once decided to bake a pie together. It was going to be a great mother/daughter experience and we were happily talking while carefully measuring every ingredient. When the dough for the crust was ready we taste tested it and to our horror it was disgusting!! We retraced our steps to discover we had both added salt. Needless to say the crust had to be tossed and we had to begin again. It was one of our most comical baking blunders.

If a wacky pancake story is fair, here is one. If not, well, moderate it out. I won’t mind.
Communal house, some years back, Thanksgiving happening tomorrow, I had set a sourdough pancake sponge Sunday night (this was in BC…..) and pledged to finish and cook them in the morning for breakfast. We guys, and a few of the gals, got up early and headed out for a barefoot mudfest at a nearby footie pitch in what could rightly be called a “downward trending fog”/ Having had enough, we headed back to the house… and those SWEET sisters remaining behind had taken the sponge and dutifully baked them….. into round things of a consistency somewhere between thick tortillas left overlong on the comal to harden(they never did brown) and some German Knackbrodt…. even with lots of butter and maple syrup they were, well, I started over and made a big bowl of ordinarly pancake batter, and we had them. Too bad we didn’t have chickens, they’d have loved them. They figured (we determined after some discussio) that what I had left behind was ready to bake, not understanding that the sponge needed critical ingredients to make batter. We all had a great laugh over it, no one cried, and we all got stuffed on the huge feast prepared. We had to give the Ladies high marks for valour and service.. their hearts were certainly golden.
As to your dilemma with the yummie chocolate concoction…. before I read that you were using coconut milk/cream, I had thought to try “expanding” the milk with steam, sort of like the steam wand on the espresso machine does, or perhaps use an old fashioned hand milk frother (Bodum still make them). It is likely that, as you made the brew the night before, some yeast or other such beasties went to work and converted some of the milk sugars to protein, giving “body” to the milk. By far the best chocolate drink I’ve had was made with expanded whole milk and handmade bean-to-bar chocolate (before creo got going, so not there). The heat thickens and sweetens the milk by modifying the proteins and fats. Careful, else it will scald and taste like that, and not be uniformly expanded. I am not up to speed on the proper use of non-dairly “milk” products, but am given to believe most of them behave similarly to daiiy milk. A few thoughts on some avenues to explore.
What a FUN post.. and I agree, when I saw those cups and saucers I almost gasped… they are amazingly wonderful. A fine memento of her.
